Polyphenols are biologically active
 compounds with antioxidant properties present in
 foods such as black tea, coffee, red wine and cocoa;
 its content depends on atmospheric conditions,
 cultivation, processing storage. The objective of
 this work was to determine the of polyphenols
 in beverages by two colorimetric methods
 establish a correlation antioxidant
 capacity. polyphenols determined
 Folin-Ciocalteu ISO 9648-1988 methods this, their consumption
 diet could be estimated. linear correlation
 between capacity (Folin-
 Ciocalteu method) is from very strong strong, while
 method it strong
 moderate. foregoing would indicate that by
 ingesting have higher
 polyphenols, they will greater
 capacity, favoring body’s defense.
